Reasons for Obesity - Jaded Taste Buds Doing You In?
If you find yourself eating more and tasting less, perhaps you want to better understand the relationship between your tongue, the brain and the taste of sweets. Neuroscientists from Penn State conducted a study between lean and obese rats to learn more about the reasons for obesity. What they found could have startling implications.

plain water & six different concentrations of sucrose. One thing to note is that the obese rats began lean, like their test counterparts but because of a missing satiety signal, they tend to persistently overeat. They become obese and develop diabetes. They also prefer sweet foods and work harder for sweet food rewards than the leaner rats.
The obese rats had 50% fewer neurons firing when their tongues were exposed to sucrose than the lean rats. (Salt was the same for both types of rats.) This data implies obese rats are overall less sensitive to sucrose. But when given a stronger dose of sucrose, their brains fired even more vigorously then in the lean rats. Researchers conclude
- there is a difference in activation of neurons between lean and obese rats when they are exposed varying concentrations of sucrose,” noted Andras Hajnal, associate professor of neural and behavioral sciences at Penn State College of Medicine. “If you sense sweetness less, you may be inclined to eat sweeter foods.” http://www.sciencedaily.com/releases/2008/11/081126133409.htm
The same may hold true for humans. For those considered obese, the neurotransmitter associated with the brains pleasure system, dopamine, is usually decreased. We eat more sweets to experience pleasure (dopamine) and by eating more, the nerve responds less, dulling over repeated applications. Jaded taste buds and yet more reasons for obesity.
What does this mean for us? There is an ever escalating amount of sugar and fat in processed foods on the market. The intensified tastes of such foods stimulates our taste receptors and food reward associations on an ongoing basis. We want more, we receive less payoff (dopamine) and we eat more to compensate.
Simply stated, we seek new ways to increase our taste experience instead of simply eating less to retrain our taste buds. Now, we know why. So many reasons for obesity to begin. To quote Hajnal, “We simply start putting an extra spoonful of sugar in our coffee.”
